Cauliflower Fried Rice

If you have not jumped on the cauliflower rice, where have you been. It has been a popular substitute for rice, tortillas, and pizza dough. It does not have the same taste as rice, but a great low carb alternative.   A cup of chopped cauliflower provides 85%  of our recommended daily vitamin, 10 % daily fiber, a great amount of potassium,  5 grams of carbohydrates, and only 45 grams of carbs. You can see why people gravitate towards a low calorie side dish. The farmers market carries all ingredients to create Cauliflower rice, minus the seasoning.  You can add in your choice of protein to finish off this great recipe.

Items you can find at the market:

-  2 cups Cauliflower            -1/2 cup Carrots            

- Handful of green onions   - half a white onion            -3 cloves garlic       

-2 eggs  

Seasoning:

-Sesame oil           -Avocado oil        -Coco aminos    -Salt                       -Pepper                    -Onion powder 

-Garlic powder

In a Wok  sauté some onions, olive oil, and sesame oil for 3 minutes. Add in all dry seasoning, chopped garlic, carrots, and cauliflower for another 10 minutes. Put the veggies to the side of the pan and add in 2 eggs scrambled.  Lastly add in the coco aminos and green onions.
